I follow a handful of foragers on instagram and saw many of them fermenting Spruce tips for soda! It was pretty simple. Jars, water, spruce tips, berries, honey and patience. I fermented these jars for just over 4 days before quickly drinking all the sweet, bubbly nectar. Next time I’m going to do a larger batch and leave it to ferment for 7-10 day for a heavier fizz. Although this is fun and tasty I wouldn’t recommend it be a daily treat. However natural, it is loaded with sugar from the honey and berries.
